Odpust jest tu na porządku dziennym! Dobra kuchnia jest prosta, ale wyrafinowana. Charakteryzuje się świeżymi składnikami, zamiłowaniem do eksperymentowania i dbałością o szczegóły.
A także mieszanie różnych stylów. Ponieważ tylko w ten sposób można stworzyć nowe doznania smakowe. Nowoczesna kuchnia Południowego Tyrolu zdecydowanie spełnia wszystkie te zasady. Powstaje i upada dzięki połączeniu autentycznej kuchni tyrolskiej, a przede wszystkim śródziemnomorskiej sztuki kulinarnej, po której odziedziczyła zamiłowanie do świeżych ziół, szlachetnych olejów i delikatnego przygotowania.
W tradycyjnej kuchni tyrolskiej ludzie czasami nie myślą zbyt wiele o specjalnym przygotowaniu knedli lub różnych smakach gulaszu. Do dziś jednak kuchnia Południowego Tyrolu wyemancypowała się z osobliwej "kuchni Haudrauf" i obecnie prezentuje się jako znacznie świeższa, lżejsza i bardziej świadoma.
Nie oznacza to, że stare tradycje kulinarne i przepisy są wyrzucane za burtę. Schlutzkrapfen są nadal przygotowywane tak samo jak 100 lat temu, tylko teraz są przyozdobione delikatnym włoskim parmezanem. Świeżo ścięte szparagi z Południowego Tyrolu są nadal podawane z sosem Bolzano, ale czasami także z rukolą lub śródziemnomorskimi ziołami. Ludzie nie boją się też podawać włoskiego carpaccio z jagnięciny z Południowego Tyrolu z dzikimi ziołami i chabrami.
